Vegetarian: Potato Frittata Recipe

Ever try and eat vegetarian for a week? No, me either. I should though as talk about a cheap way to live. It’s remarkable to sit back and think about how much money you spend on food and how many Cheap Meals you could have if you only ate vegetarian every now and again. I’m going to try it a little and as I find good recipes, i’ll update them here.
(serves 6) 1.3lb (500g) of baby new potato 1 tablespoon oil 1 medium red pepper (capsicum) 1 small onion 1/4 cup coarsely chopped basil 1/4 cup coarsely chopped flat-leaf parsley 10 eggs 1/2 cup grated parmesan cheese- Boil, steam or microwave potato until tender. Chop into quarters.
- Meanwhile, heat oil in large non-stick pan, cook pepper (capsicum) and onion, stirring until soft
- Combine potato, basil, parsley and eggs in large bowl. Pour egg mixture into pan. Cook over low heat about 8 minutes or until edges set.
- Meanwhile, preheat grill
- Sprinkle top with cheese. Place pan under grill until Frittata set
