Mushroom and Italian Sausage Risotto Recipe

Mama mia those Italians know a thing or two about cooking. What a fantastic idea risotto was. It’s difficult to find a bad risotto and I’m hoping to add a few more to the Cheap Meals site. I just have to try a few different combinations – it’s a tough gig. Anyway, here’s my favourite Cheap Recipe for risotto;

(serves 4)
7oz (200g)mushrooms, chopped
7oz (200g) italian sausage
2.5 cups arborio rice
40oz (1.1L) Chicken or Vegetable Stock
1 cup shaved parmesan cheese

Lightly fry mushrooms and sausages in a non-stick pan. As sausages brown, remove and slice, then return to pan. Add rice – stir until combined. Put stock in another pan and boil. Add about 3/4 cup stock to rice, stir untile completely absorbed. Continue adding slowly until all absorbed. Once all stock is added and absorbed, add cheese and pepper if desired.
