Thai Green Curry Recipe

Given Thai food tastes so good, why aren’t there more fat Thai people? It’s quite perplexing really. Anyway, you can’t go wrong with a Thai Green Curry as a Cheap Meal alternative. (serves 4)1lbĀ (500g) chicken thights, boneless & skinless 1/4 Green Curry Paste 13.5Oz (380ml) can coconut milk 1 cup snow peas 1 chopped sweet potato 2 cups chopped brocoli
Cut chicken into strips. Heat wok & add Green Curry paste, cook/stir for a minute or so until fragrant. Add chicken and cook, stirring for about 10 minutes, until almost done. Sir in coconut milk and bring to boil. Add sweet potato and simmer for 30 minutes. Add Snow peas and brocoli, simmeer for 10 minutes.
Serve on rice.
